Taproom General Manager
Overview
Two Robbers Seltzer Co. is the leading independent hard seltzer and “beyond-beer” company in the Northeast US, and based out of Philly. After launching in 2019 and seeing several years of explosive growth with their beverage business, the company is launching its flagship 4,000 square ft taproom in Fishtown, in the summer of 2022. It will serve as a multi-programmatic space with a drink program featuring the brand’s unique hard seltzers, cocktails, and beers; a food menu that will be centered around an incredible smash burger, a retail store, and an art installation featuring an incredible local Philly artist. The company aims to have the space represent a physical manifestation of the creativity that the Two Robbers brand is well known for.
Two Robbers is looking for a well-experienced General Manager for its flagship retail location. Amongst other responsibilities, the GM will be expected to provide the highest level of food and beverage service possible in an efficient, courteous, personable and professional manner to ensure a positive guest experience.
Experience:
- 10+ years of experience in hospitality, food and beverage
- 4+ years as the GM of a reputable restaurant or bar
General Manager responsibilities and Duties:
First 60 days:
- Working closely with ownership to understand the goals of the space, understand staffing needs, vendor requirements, menu, etc.
- Taking learnings to establish restaurant standard operating procedures
- Hiring staff
- Onboarding food & beverage vendors
- Establish “launch” plans, events, marketing strategy
Daily Responsibilities:
1. Walk through restaurant. Check on all equipment, furniture, fixtures, etc. (Coordinate repairs/maintenance if needed) Inspect for cleanliness.
2. Analyze floor, bar and delivery sales information from the previous day (Avero). Compare with past few weeks/years.
3. Inspect all void, promo and return checks from the previous day and act as necessary.
4. Track server and bartender sales and tip percentages.
5. Count the previous day’s money, reconcile and prepare the deposit.
6. Enter the FOH employee’s tips from the previous day.
7. Prepare the restaurant for opening. Check in all daytime staff, oversee and assist in set up, get daily specials from chef and describe to staff.
8. Manage floor during lunch. Oversee floor staff, make cocktails, buss tables, help expedite, welcome and chat with customers.
9. Oversee changeover
Check in all night staff; meet with night manager to prepare for shift.
10. Close out daytime. Drop server cash.
Weekly Responsibilities
1. Prepare all schedules
Server(s), Bar, Busser(s), Runner(s), Delivery, Host, Manager.
2. Ordering and Receiving
Order all Beer, Wine, Liquor, Glassware, Silverware, Flatware, Small wares, Cleaning Supplies, Uniforms (Track all purchases on excel spreadsheet) Sign and send all invoices for payment.
3. Payroll
Prepare payroll for processing by signing off on all employee hours (calculating spread of hours as well)
4. Cost Reporting
Food, Beverage, and Labor
5. Hiring
Hire all FOH positions as needed. Interview potential employees Wednesday afternoons
On-Going Responsibilities
- Enforce all policies and procedures as written in the staff manuals
Update manuals as needed
- Prepare/lead monthly manager and quarterly departmental meetings
- Oversee each employees training, job performance and happiness
Organize all performance and counseling reports to store in individual employee folders
- Constantly evaluate food/drink quality with chefs/bartenders
- Ensure the restaurant’s compliance with the Philadelphia Dept. of Health’s rules and regulations
- Ensure the restaurant’s compliance with the Dept of Labor’s rules and regulations
- Ensure the restaurant’s compliance with OESHA
- Create seasonal cocktail and beer lists
- Consult with chefs on seasonal menu item changes and prices
- Update and print all menus (In Design)
- Update and manage/program POS system (Micros)
- Respond to all customer complaints, questions, etc…
- Negotiate and coordinate all large party reservations and buyouts
- Negotiate and coordinate all photo, film and video shoots
- Respond to all donation requests
- Oversee Website upkeep and all Social Media (Facebook, Twitter, Google, Instagram)
- Oversee Seamless Web operations and reconcile checks
- Represent the restaurant at Community Council Meetings (once in a while)
- MD/Manage and close dinner shifts as needed
- 24 hour a day, seven days a week availability for any and all restaurant business
Compensation:
Compensation will be highly competitive with industry / market rates and will be experience-dependent. Will include a base salary and company benefits.

Sales Rep, Long Island, NY
Primary responsibilities of the position include:
- Daily on-premise and off-premise account relationship management
- Regular account visits to existing and new accounts
- Regular sales calls to existing and new accounts
- Ability to develop and maintain relationships with key managers/buyers at target accounts
- Track and monitor progress with accounts
- Ensure proper merchandising of Two Robbers at on and off premise accounts
- Create, Schedule, and Execute off-premise sampling’s, on-premise events & programming, festivals, and wholesaler work-withs
- Establish weekly target account lists and sales goals, and ability to achieve and execute on such goals
- Maintains constant communication with Two Robbers team and wholesaler representatives
- Ability to “wear multiple hats,” including completion of administrative tasks, expense reporting, budget management, etc.
- Engage, instruct, and inspire consumers about the brand
- Embrace and represent Two Robbers’ values, purpose, and brand-identity at all times
- Reports to Sales Director
- Must be available to work weeknights and weekends as required
Experience / Qualifications / Requirements:
- Must be currently living in the Long Island market
- 2+ Years of Beer Sales with a supplier or distributor is required
- Bachelors Degree required
- Prior experience with VIP and KARMA software’s
- Strong knowledge of the Long Island market including existing relationships with accounts
- Physical demands include ability to frequently lift and move up to 40 pounds or more
- Reliable car, valid drivers license, and clean driving record
